JOB DESCRIPTION

Position: Executive Chef
Department: Kitchen
Reports to: General Manager
Responsible for: Sous Chef, Chef de Partie, Commis, and Stewards
Location: Nyagatare, Rwanda


Primary Objective of the Position

The Executive Chef is responsible for all aspects of the kitchen, including menu planning, operations, recipe creation, financial management, portion and inventory control, food quality assurance, and staff supervision.

This position involves hands-on leadership, team development, and maintaining a high level of culinary excellence aligned with Mantis Epic Hotel and Suites’ standards. The Executive Chef ensures that food production meets HACCP policies, maintains consistency in quality and presentation, and fosters a guest-centric culture across the kitchen team.


Key Responsibilities

1. Culinary Operations

  • Lead all kitchen operations as an independent profit center, ensuring maximum guest satisfaction and efficiency.

  • Personally perform key culinary tasks while supervising and mentoring the kitchen team.

  • Develop creative menus and ensure all dishes meet the highest standards of quality and presentation.

  • Maintain strict recipe adherence, portion control, and minimize food waste.

  • Monitor stock levels and ensure adequate supplies according to hotel occupancy forecasts.

  • Ensure all kitchen equipment is properly maintained, cleaned, and safely used.

  • Supervise food preparation and service, ensuring all meals meet hotel standards.

2. Leadership and Staff Management

  • Train, coach, and motivate kitchen staff to achieve excellence in performance.

  • Manage staff schedules, leave rosters, and performance evaluations.

  • Maintain professional grooming and uniform standards for all staff.

  • Foster teamwork, discipline, and a positive working environment.

3. Financial & Administrative Management

  • Monitor departmental budgets and ensure financial targets are achieved.

  • Regularly review cost control measures and product pricing.

  • Ensure accurate costing of menus and maintain profitability.

  • Manage inventory control and supplier quality checks.

4. Health, Safety & Hygiene

  • Enforce strict compliance with health, sanitation, and food safety regulations.

  • Maintain excellent personal hygiene and ensure team adherence to HACCP policies.

  • Report potential hazards and ensure corrective action is taken immediately.

  • Be fully familiar with hotel fire, emergency, and health & safety procedures.

5. Guest Satisfaction & Quality Control

  • Interact with guests to gather feedback and ensure satisfaction.

  • Handle guest complaints professionally and effectively.

  • Ensure buffet stations and restaurant services are well-presented and efficiently run.

6. Innovation and Responsible Business

  • Stay updated on culinary trends and introduce innovative ideas to enhance menus.

  • Participate in environmental and social initiatives aligned with Mantis “Responsible Business” principles.


Qualifications & Experience

Education:

  • Bachelor’s Degree (A0) in Culinary Arts, Hotel or Restaurant Management, or related field with minimum 5 years’ experience.

  • OR Advanced Diploma (A1) in Culinary Arts or related field with minimum 7 years’ experience.

Additional Requirements:

  • Professional culinary certifications are an added advantage.

  • Strong leadership, communication, and organizational skills.

  • Proven record of managing large kitchen operations.

  • Ability to work flexible hours, including weekends and holidays.
